Stacy Coplin is the co-owner of Local Leaf, a local business that sustainably harvests wild yaupon, North America’s only caffeinated native plant.
Local Leaf uses techniques honed in Japan to create their Yaupon Matcha Powder™ – now available at Austin-area Whole Foods locations. She also collaborates with local brands like Lick Ice Cream to make yaupon matcha-infused treats.

Stacy recently co-authored Falcon Guides’
Foraging Texas – Finding, Identifying, and
