Succulent, simple, and bursting with flavor is Rosewood Gulf Coast Chop House’s Wagyu Beef Parisa. For those who’ve never heard of Parisa, this Hill Country specialty is most often compared to beef tartare though it’s a uniquely Texan take on a classic French dish. At Rosewood, a fine dining establishment that takes good food seriously, the decadence of Wagyu Beef isn’t enough. The bone marrow of this choice cut is used in place of the more typical lean beef and finely combined with an aged cheddar that adds a sharpness and hot sauce for a bit of kick.
