This made-to-order dairy delicacy begins with Stracciatella. Stracciatella, in this case, specifically references the ‘little shreds’ of mozzarella mixed with cream which is then wrapped in a mozzarella casing. Intero’s take on burrata is shouldered on a house-made walnut sourdough that lays the groundwork for this elegant open-faced sandwich. Made in-house with rye flour, molasses, and earthy, sweet walnuts, this bread is grilled and topped with Swiss chard tossed in a warm anchovy vinaigrette. Chef Ian Thurwachter is not one to let anything go to waste. He saves the Swiss chard stems, which are pickled and sprinkled on top.
